About Weihong
Hi, I’m Weihong — a master-level Chinese cuisine instructor from a multi-generation restaurant family. My second uncle, father, and uncle-in-law have all served as head chefs at large restaurants, and I grew up learning the craft with professional standards of safety, timing, and consistency. I teach clear, repeatable methods—mise en place, heat cues, flavor/texture calibration—and a recipe progression: learn → modify → forget the recipe, so you can cook with confidence without notes. Students can expect patient pacing, concise checklists, and measurable progress each lesson. I’m reliable, punctual, and respectful; mistakes are data, not failures. Stepwise, testable methods: mise en place → timed heat cues → flavor/texture calibration → plated result
Recipe progression: learn the recipe → modify the recipe → forget the recipe (学菜谱 → 改菜谱 → 忘菜谱) — we start with a baseline, practice principled substitutions, then cook from first principles without notes
Knife skills progression (grip, stance, classic cuts), wok heat control (wok hei), oil management
Stocks & sauce systems: master stock, red-braise base, clear broths, versatile aroma oils
Texture targets: crisp-tender veg, slide-set eggs, velvety proteins, glassy noodles
Flavor mapping and seasoning ladders; sanitation, scaling, and small-kitchen workflow

I've known Weihong for seven years since high school, and he's genuinely one of the most knowledgeable people I know when it comes to Chinese language and culture.
What makes Weihong special is his depth of knowledge and his infectious energy. Not only is he fluent, but he goes further, studying classical Chinese, philosophy, and cultural history. He introduced me to Liu Cixin's Three Body Problem and would point out things like how the characters' Chinese names carry symbolic meaning - I still remember 心 (heart) because of how he explained Cheng Xin's name. These little connections he makes are what make things actually stick in your memory. We'd stay up late discussing Chinese literature and philosophy, his passion and curiosity fueling the discussion.
His teaching style is all about understanding the "why" behind things. Even when we're cooking traditional recipes together, he'll explain the chemistry and theory - it goes over my head, but that's exactly his teaching style: he finds creative ways to explain complex things until they click. I've seen him tutoring others in math, and he has this gift for making sure people truly grasp concepts, not just memorize them - the same approach he takes when explaining Chinese culture to me.
As a friend, he's always the guy trying to get you out and about; he got me out of my shell during lockdown and got me to attend a Chinese youth group where, despite not knowing the language, I made friends and had lots of laughs. Even though I was a complete beginner, he found ways to help me participate and understand what was happening. Whatever setbacks come his way, he just keeps going with relentless optimism.
His knowledge and passion are what inspired me to start learning Chinese myself. He's patient, thoughtful, and makes complex cultural concepts accessible.
