The student is assessed to determine where he or she stands. That means the student will play a prepared piece. Other assessments include playing something by ear, note reading, improvisation. Usually I can tell in one note and by the tone, just where to begin. I'll have an approach and am also open to hearing from the student what specific compositions and styles they want too!
