About Nelson

Hi, I’m Nelson Royar, the creator behind "Scribbled Recipes" and a passionate advocate for authentic regional Indian cuisine.

My culinary journey is a blend of traditional heritage and professional discipline. Born and raised in Bangalore, I have spent over 15 years mastering the diverse flavors of South India from the spicy kick of Andhra Chilli Chicken to the comforting soul of a perfect Karnataka-style Bisi Bele Bath.

Professional Credentials & Experience
While I grew up in a culture where food is a language of love, I chose to refine my skills through formal training:

Culinary Training: I completed professional culinary skills training at one of the top colleges in Toronto, where I mastered the technical aspects of consistency, knife skills, and kitchen management.

Master Chef at the Sea: I am proud to be a winner of the "Master Chef at the Sea" competition on the MSC Meraviglia, where I was recognized for my presentation, teamwork, and ability to create high-quality dishes under pressure.

Content Creator: Through my YouTube channel, Scribbled Recipes, I share regional techniques with a global audience, focusing on making complex traditional dishes accessible to the modern home cook.

My Cooking Philosophy
I believe that great Indian food isn’t just about "heat" it’s about the layers of flavor and the science of the ingredients. Whether it’s the precise fermentation of a Dosa batter in the cold Ontario climate or the slow-cooked perfection of an Ambur-style Biryani, I focus on teaching you the why behind the how.

Why I Teach
After moving to Oshawa, Ontario, I realized how difficult it is to find the true taste of South Indian "home" in local restaurants. I started these workshops to bridge that gap. My goal is to empower you to create restaurant-quality, regional signature dishes in your own kitchen using simple tools and authentic techniques.

When I’m not in the kitchen or filming for my channel, I’m constantly experimenting with new spice blends and perfecting my signature recipes, like my Kerala-style Ghee Rice and Bangalore-style Chicken Kebab.

I look forward to sharing my kitchen secrets and the vibrant stories of South Indian food with you!

What You Will Master:
We don’t just "follow a recipe"—we learn the science and soul of the dish. My curriculum focuses on the legendary flavors of Bangalore, Kerala, Tamil Nadu, and Andhra, including:

The Art of Fermentation: Master the perfect Idli and Dosa batter (even in the cold Ontario climate!).

Signature Biryanis: Learn the specific techniques for Ambur, Dindigul, and Kerala-style Ghee Rice.

The "Scribbled" Secrets: From my signature Bangalore-style Chicken Kebab and "Sweet" Sambar to the complex flavors of Ennai Kathirikkai and Bisi Bele Bath.

Pro-Techniques: As a Culinary College trained cook, I teach you knife skills, consistency, tempering (Oggarane), and presentation tips that I used to win Master Chef at the Sea on the MSC Meraviglia.

How We Cook:
Virtual Cook-Alongs: Join me from your own kitchen! I provide a detailed ingredient list in advance. We cook in real-time, and I troubleshoot your dish as we go via video.

In-Home Workshops (Durham Region): I bring the "Master Chef" experience to you. I provide the specialty spices and ingredients; you just bring the appetite!

Tips & Tricks: I’ll share the "cheats" for getting restaurant-quality results at home with minimal investment in equipment.
