About Chef Elaine

My Big, Fat, Greek Cooking Class offers students hands-on cooking classes using mostly heart-healthy recipes.Recipe booklets are included, and wine is served to those 21 and older. Food that is prepared in class is served to the students, and take-home containers are also offered to each student at the end of class. The classes take place at The Casements in Ormond Beach - the Winter Home of John D. Rockefeller.

For the past 13 years, I've been offering Greek Cooking Classes at The Casements and each class is a unique learning experience. I have a passion for Greek Cooking and my students come back, again and again, to learn how to make delicious and healthy foods!

I began teaching My Big, Fat, Greek Cooking Class in 2004 at The Casements in Ormond Beach, FL and I've used the acquired techniques from Greece in addition to my prior knowledge of the culinary arts through my mother Connie Spinos, who was an exceptional Home Economics teacher before she retired.

I am a trained Research Scientist from Harvard University and not a classically trained chef. While living in Greece in 1999, I learned cooking techniques from several acclaimed Greek Chefs from Corinth, Kastoria, and the islands of Samos, and Salamina.

About the lesson

When a new customer contacts me via my website, I will contact them to find out which class or classes they would like to register. Once I receive their payment, they are registered and further instructions are emailed to them.

I have taught nearly 1500 students - both men and women, and as young as 4 years old and as old as 90 years young! Every student - young and old- have all had a wonderful time at My Big, Fat, Greek Cooking Class!

My Big, Fat, Greek Cooking Class is the only Greek Cooking instruction in the Central Florida area, and the classes take place in a beautiful historic home: The Casements, that was the Winter Home of John D. Rockefeller. But you don't have to be a billionaire to take my classes!

Every class is a winner! The classes are hands-on cooking classes where the students follow along with the recipe booklets that I provide. This way the students can replicate every we make in class- at their homes!

Each Greek Cooking Class covers a full menu (every month a different menu) that takes about 3 1/2 hours to prepare, and half way through I like to take a break for the students to sample some of the food we prepare and open bottles of wine so we can Toast to each others Good Health! This is my way of thanking each of my students for coming to My Big, Fat, Greek Cooking Class!
