About Topher

I spent over 30 years in the restaurant business, first as a Chef and then as a restaurateur. My Classic Pastry Chef, and Extensive Hot and Cold food experience makes me very qualified to pass on this information in a class setting. These years have given me the eyes to look at our food system from a unique viewpoint. It also instilled a discipline in regards to feasibility so we can live better and grow more healthy options for our family.

After 25 years, my wife and I returned to New Ulm, MN where I grew up. We purchased a warehouse and began building a unique location that houses many different showcases to educate how we can live and grow our own food in a sustainable manner.

We use the bottom floor of the warehouse to house our fully functioning aquaculture center. We have a Yellow Perch Hatchery with thousands of fish in various stages of life. This is available for tours as part of our Sustainability Class option.

On the top floor, we have a full 6 bedroom AirBNB with demonstration facilities for both classes and rentals. Being a Chef, we created a living space that doubles as an intimate chef dinner/class environment. With the addition of a fully outfitted food trailer, we have the power to service both small groups and large events.

Food safety for us, our children, and yours are constantly driving us forward to get better at creating a safe and biosecure food source, as well as sharing our example of how to live, grow, and work in a repurposed urban space.

People always ask me what is my favorite dish is or what I like best about cooking. It’s a hard question to answer directly because, in my business, everything changes always. This constant changing the drug that keeps great people in this business. Turning to key to the restaurant always comes with a sense of adventure: how many guests today, what should I create for them, how do I improve my flavors and profiles, but ultimately how do I produce that smile, which is my pay for a job well done. After all these years its producing that smile that keeps me working to improve myself.

I have been teaching for 20 years plus training chefs and employees everyday, this is practical knowledge that can be applied at the consumer level or professional.

I have a Degree is Culinary Arts, with over 30 years of exprience in both Pastry, Hot, Cold Food production

About the lesson

We have a low impact process thats gives to the student the option to be as hands on as they feel comfortable with.

We have worked with adults, children, retirees, and the handicapped.
