About Benjamin
I am a 4 year Johnson & Wales graduate with valuable restaurant and recipe execution experience. Formerly an Executive Chef at a wine bar, I specialize in Italian/Mediterranean food which includes fresh pasta & traditional recipes, menu development/costing, catering private events/parties and pastry/desserts. Learn how to create recipes from the ground, sensory and flavor analysis, beginner - advanced plating and plating techniques, and experience this wonderfully soul satisfying creative outlet with a professional every step of the way

The true potential of cooking isn't in memorization of recipes, but a journey in finding one's personal cooking style; everyone has a different background of cooking knowledge from home cook to professional. I would like to help you reach your personal goals as well as show tangible signs of improvement in your overall abilities.
For example, if someone wanted to improve on their ability to cook meat I would provide them with the following:
Mallard Reaction and why it's important
Science behind salt and seasoning
Proper cooking temperatures and food safety
Other components to pair with meats
Identifying your skill level and desired outcomes, teaching at your pace and making sure a sound fundamental skill set is established would be my overall goals for the class. My personal philosophy is to help you understand each ingredient, its purpose and how it contributes to the final product. Knowledge in good cooking goes further than just knowing recipes and ingredients; it involves the understanding of the combinations of flavors, temperatures, textures and the end presentation.

Ben is not only a graduate of Johnson & Wales Culinary program, he has proven himself with the numerous meals he has made for our guests and at restaurants. Our guests were charmed by many meals from delicious small bite appetizers, main meals to his incredible bread pudding ( which he mastered first hand from his years working in restaurants). Ben showed me step by step preparing many desserts. Not only did he teach me how to make ( and impress many friends) but consistently amazed the patrons at the restaurants he worked at. The top two he taught to me, won awards for, and gets request for, are his luscious White Chocolate Pumpkin Cheesecake and his Mocha Hazelnut Sachertorte! From Ben's charm, to his yummy "desserts" made simple... you will be pleased to work with him.:)
